Copycat Cava Mediterranean Bowls - made from the comfort of your home!

After I tried Cava for the first time on vacation in Tennessee, I knew this was something I would have to recreate at home! It's like the Mediterranean version of Chipotle and let me tell ya, I am HERE FOR IT! These are officially on repeat in our house.

On a bed of brown rice and fresh arugula, I added my Grilled Mediterranean Chicken, cucumbers, pickled red onion (recipe on @lenaskitchenblog), hummus, and kalamata olives. I drizzled it all with my fresh Lemon Dill Dressing & served with freshly warmed pita bread!

Copycat Cava Mediterranean Bowls

Prep time: 20 minutes

Cook time: 35 minutes

Total time: 55 minutes

Servings: 2-3 bowls

Ingredients:

Cava Bowls -

  • 1 cup brown rice, uncooked
  • 2 cups arugula
  • Mediterranean Grilled Chicken (recipe below)
  • 1 cucumber, diced
  • 1/2 red onion, pickled (recipe linked above, will have leftovers)
  • 1/2 cup hummus of choice
  • Kalamata olives, to taste
  • Pita bread
  • Lemon Dill Dressing (recipe below)

Mediterranean Grilled Chicken -

  • 2-3 chicken breasts
  • Zest and juice of 1 lemon
  • 1 Tbsp olive oil
  • 2 tsp red wine vinegar
  • 1 Tbsp fresh dill, chopped
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp garlic powder

Lemon Dill Dressing -

  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 1 Tbsp red wine vinegar
  • 1/2 Tbsp fresh dill, finely chopped
  • 1 Tbsp dijon mustard
  • 1/2 tsp coriander
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder

Instructions:

  1. Preheat oven to 350F.

  2. Cook rice according to instructions, set aside.

  3. Once rice is cooking, mix all ingredients for the Mediterranean chicken marinade and use a basting brush to brush the chicken. Bake at 350F for 25-30 minutes or cook on barbecue until fully cooked through.

  4. In a small bowl, mix together Lemon Dill Dressing ingredients.

  5. In 2-3 serving bowls, assemble brown rice, arugula, Mediterranean Grilled Chicken, diced cucumber, pickled red onion, a scoop of hummus in each, kalamata olives, and a warm piece of pita bread.

  6. Drizzle each bowl with Lemon Dill Dressing and serve! Bi

 
 

I hope you enjoy this homemade version of the infamous Cava bowl! I personally want to drizzle everything in this lemon dill dressing from here on out… but maybe that’s just me…
