Fall Apple Crisp

Doesn’t fall just give you allll the feels & make you want to cozy up on the couch with a big fluffy blanket by the fire… Well, I don’t have a fire, but I do have an oven, so that will have to do!
What could be better than a warm plate of apple crisp, topped with your favorite dairy-free vanilla ice cream or whipped cream for an a la mode treat to complement your snuggle sesh (heart eyes)!
Whether you’re gathering with loved ones or spending some quiet time at home - this is a simple, healthy, and delicious treat! Also a perfect Thanksgiving contribution for the members of your family that will appreciate a healthy take on apple pie.
Fall Apple Crisp [gluten-free]
gluten-free, dairy-free, vegan
What you’ll need:
Apple mix -
6-7 small Honeycrisp apples (or your favorite apple of the season), diced
2 Tbsp pure maple syrup
5 Tbsp water (cold)
1 Tbsp Primal Kitchen apple pie spice (or cinnamon)
Crumble Topping -
2 cup gluten-free oats
1 cup almond flour
½ cup chopped pecans
½ cup Purely Elizabeth Pumpkin Cinnamon granola (or your preferred GF granola)
1.5 tsp cinnamon
Dash of sea salt
½ cup coconut oil, melted and slightly cooled
½ cup pure maple syrup
What to do:
Preheat oven to 350 degrees
Mix together apple ingredients in a bowl and pour into a greased 9x9 baking dish (grease with coconut oil or coconut oil spray)
In a separate bowl, stir together oats, almond flour, pecans, granola, cinnamon, sea salt melted coconut oil, and maple syrup until it develops a crumble consistency
Pour crumble over apples in the dish and spread evenly to create a layer over the apples
Bake for 40-45 minutes (or if you would like to make these as individual “cupcake” style, fill into cupcake liners and bake for 25-30 minutes)
Top with your favorite dairy-free vanilla ice cream or coconut whipped cream
