Gluten-Free Earl Grey Lemon Banana Bread

What better way to start your day than a hot cup of tea, a good book & a thick slice of Gluten-Free Earl Grey Lemon Banana Bread! {swoon}
This warm and citrusy banana bread loaf has me feeling like I’m cozied up in a local coffee shop by a windowsill, book in hand and hot coffee aroma all around.
The Earl Grey Tea offers a slight black tea and lavender taste, while the citrus of the lemon and sweet banana balances the flavor of the bread, for an all around delightful combination!
To make this GF Earl Grey Lemon Banana Bread, I start by steeping 1 Earl Grey tea bag in 1/2 cup hot water and allowing it to cool, which I’ll use in various steps along the way. Then, I mash 1 cups worth of ripe bananas, juice/zest one lemon, and add the remaining wet ingredients into the mixing bowl. Make sure to set aside about 1 tsp of lemon zest for the icing at the end. Once the tea has steeped for 5 minutes, I remove the tea bag and add 3 Tbsp to the wet ingredients, mixing to combine.
Adding all dry ingredients into a separate bowl, I cut open 1 Earl Grey tea bag and pour the contents directly into the mix. Stir stir stir, then combine the wet and dry ingredients.
While the banana bread is baking, I quickly whip up the Lemon Earl Grey Icing with powdered sugar, coconut milk, lemon juice + 1 tsp zest, and 1 Tbsp steeped Earl Grey tea. After the bread has cooled, I pour over the icing and serve!
Pairs well with hot Earl Grey tea or a hot cup of coffee.
Gluten-Free Earl Grey Lemon Banana Bread

Servings: 8-10 slices
Ingredients:
- 2 Earl Grey tea bags (split)
- 1/2 cup hot water
- 2 ripe bananas (1 cup mashed)
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 cup unsweetened apple sauce
- 2 eggs
- 1 lemon, juice and zest (split)
- 2 1/2 cup almond flour
- 1/4 cup coconut flour
- 2 Tbsp ground flax seed
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup powdered sugar
- 1 Tbsp coconut milk (or preferred dairy-free milk)
Instructions:
Preheat oven to 350 F
Heat 1/2 cup water and steep 1 Earl Grey tea bag for 5 minutes. Let cool or add ice to cool (and remove ice before fully melted).
In a mixing bowl, mash the ripe bananas in a bowl and add in coconut sugar, vanilla, apple sauce, eggs, zest of lemon + 2 Tbsp lemon juice, and 3 Tbsp steeped Earl Grey tea. Mix to combine.
In a separate bowl, combine dry ingredients (almond flour, coconut flour, flax, baking powder, baking soda, salt) and stir until mixed thoroughly.
Cut open 1 Earl Grey tea bag and pour loose tea into dry ingredients, mix.
Add wet ingredients into dry ingredients, stir to combine.
Line a loaf pan with parchmnent paper, pour in banana bread mixture. Cover with foil (tent the foil) and bake 50-55 minutes, until a toothpick comes out clean when pricked
In a small bowl, mix together powdered sugar, coconut milk, juice of 1/2 lemon + 1 tsp zest, and 1 Tbsp of steeped Earl Grey Tea.
Cool banana bread for 20 minutes and pour over lemon icing.
Serve with a hot cup of Earl Grey tea or your favorite coffee, sit back and enjoy!
