Gluten-Free Pumpkin Chocolate Chip Waffles

What better way to celebrate the fall season than a fresh stack of Gluten-Free Pumpkin Chocolate Chip Waffles! With the cozy flavor of pumpkin and the fluffy crunch of fresh waffles hot off the iron, these make for a brunch dish the whole family can enjoy!

This recipe calls for pumpkin puree, which is simply steamed and pureed pumpkin. This does not have any added sugar or flavorings, like pumpkin pie filling does. Make sure to grab a can of pure pumpkin puree for this recipe (or if you’re feeling wild, you can even make your own at home!)

Now heat up the waffle iron because we’re whipping up some flavorful and festive Pumpkin Waffles!

Gluten-Free Pumpkin Chocolate Chip Waffles

Prep time: 10 minutes

Cook time: 15-20 minutes

Total time: 30 minutes

Servings: 8 large waffles

Ingredients:

  • 3/4 cup pumpkin puree

  • 1 1/2 cup coconut milk (NOT canned)

  • 1/4 cup coconut oil, melted

  • 3 flax eggs (3 Tbsp ground Flax + 9 Tbsp water, let sit 10 minutes to gel up)

  • 3 Tbsp pure maple syrup

  • 1 tsp vanilla

  • 2 1/2 cup All Purpose GF Flour (I used Bobs Red Mill)

  • 1 Tbsp baking powder

  • 1 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 1/4 cup dairy-free chocolate chips (I used Enjoy Life "mini" chocolate chips)

Instructions:

  1. Heat up the waffle iron to medium-high heat (if you can control it on your appliance).

  2. Mix all wet ingredients in a large mixing bowl.

  3. In a separate bowl, mix dry ingredients.

  4. Slowly add the dry into the wet ingredients and stir to combine.

  5. Fold in chocolate chips.

  6. Scoop about 1/4 cup onto waffle iron to cook, repeat until all batter is gone

  7. Once they're ready, top with dairy-free whipped cream or your favorite dairy-free yogurt, chocolate chips, pecans, and cinnamon

 
 

Serve your pumpkin waffles with a dollop of (dairy-free) whipped cream or yogurt, chocolate chips, pecans, a little cinnamon dusting, and a drizzle of fresh maple syrup.
