Lemon Herb Chicken & Summer Salad

One of my favorite summer activities is going to my local u-pick farm and filling up containers with all the fresh berries I can get my hands on!

I recently stocked up on fresh blueberries and although strawberries weren’t quite in season yet, my local natural foods store had a great selection.

During the hot summer months, my go-to dinner is grilling up chicken on the barbecue and pairing it with a fresh salad.

A favorite in our house is this Lemon Herb Chicken with a Summer Salad, loaded with berries. I hope you enjoy it as much as we do!

Lemon Herb Chicken & Summer Salad

Yields: 3-4 servings

Prep Time: 15-20 minutes

Cook Time: About 25 minutes

What you’ll need:

  • 3-4 chicken breasts

  • 1 Tbsp olive oil or avocado oil

  • Zest and juice of 1 lemon

  • 1 tsp pepper

  • 1 tsp onion powder

  • 2 tsp garlic herb seasoning (I use the Simply Organic brand)

  • Dash of salt

  • 1 bag of Spring Lettuce Mix or Chopped Kale

  • Optional: about 1/2 cup broccoli salad mix (no dressing)

  • 1/2 cup sliced strawberries

  • 1/2 cup blueberries

  • 3 Tbsp cup pepitas

  • About 2 Tbsp dried cranberries

  • Raspberry Vinaigrette, to taste

What to do:

  1. Mix the oil, lemon juice, and seasoning in a bowl

  2. Using a basting brush, coat both sides of the chicken breasts with the marinade

  3. Place chicken on the grill and cook, flipping over halfway through, until it has reached 165 degrees F

  4. In a salad bowl, add lettuce and all of the salad toppings, then toss with dressing
