Peanut Butter Coconut No-Bake Cookies

I don’t know about you, but no-bake cookies have always been a hit at our house! And as the one who loves baking, I’m not complaining because that means I don’t even have to turn on the oven to make them & the recipe only requires one pot… less dishes for the win!
This Easter, I decided to make festive no-bake cookies with fun sprinkles and candy. I used my favorite local peanut butter from Wild Friends and made sure this was an allergen-friendly recipe the whole family can enjoy!

Peanut Butter Coconut No-Bake Cookies

* cook time: 5 minutes
* cooling time: 20-30 minutes
* total time: 40-50 minutes
Servings: About 20 cookies
Ingredients:
- 1 1/2 cups peanut butter
- 2 Tbsp vegan butter
- 2 Tbsp coconut oil
- 1/2 cup coconut sugar
- 2 tsp vanilla
- 2 cups gluten-free oats (I use Bobs Red Mill)
- 1/2 cup shredded, unsweetened coconut
- 2 Tbsp coconut flour
- Optional: Festive candies and sprinkles for topping
Instructions:
1. Add peanut butter, butter, and coconut oil to a pot on the stove, melt
2. Once melted, remove the pot from the heat and stir in coconut sugar and vanilla
3. Mix in oats, shredded coconut, and coconut flour
4. Scoop onto lined baking sheet, flattening a bit with the spoon
5. Top with candies and sprinkles, if adding these
6. Place in the freezer for 30 minutes OR in the fridge for about 2 hours to cool
