Strawberry Coconut Bliss Balls

If you know me, you know I always come prepared with the snacks. Pre-brunch snacks, Post-exercise snacks, movie snacks, you name it! As long as I keep hanger at bay, it’s smoooooth sailin!
I wanted a small bite-sized snack that I could grab on my way out the door, without feeling incredibly hungry less than 10 minutes later - and the perfect solution? BLISS BALLS! (Otherwise known as protein bites)
These bliss balls combine the protein of nut butter and protein powder, complex carbs found in gluten-free oats, and the sweet taste of dates and freeze-dried strawberries.

Strawberry Coconut Bliss Balls
Yields: 16-18 bites
Prep Time: 10-15 minutes
What you’ll need:
• 1 cup medjool dates, pitted [about 10-12 dates]⠀
• 1/2 cup cashew butter⠀
• 1/4 cup GF oats ⠀
• 1/4 cup shredded unsweetened coconut + 1/4 cup more for coating⠀
• 1/4 cup vanilla plant-based protein powder [I used Orgain protein & superfoods here]⠀
• 1/4 cup freeze-dried strawberries + 1/4 cup more [crushed] for coating ⠀
• 2 Tbsp water⠀
What to do:
Add all ingredients to a food processor [besides the water and the coconut and strawberry for coating].
Blend until fine and add water. Blend a bit more until it’s reached a thicker consistency.
In two separate bowls, add [crushed] freeze-dried strawberries to one and shredded coconut to the other.
Roll up the balls, dip in the strawberry coating, roll in the coconut, and place each in a sealed container.
Cover and put in fridge for 15-20 min to cool before serving.
NOTE: Keeps well in fridge for about a week.
