Twice Baked Sweet Potatoes with Cinnamon Pecan Streusel

As I’m preparing to host my first Thanksgiving this year, I have been planning every detail down to the tablescape and mimosas in the morning [we can’t be the only ones that request mimosas while cooking in the kitchen…right?]

Which brings me to my favorite part of the planning process… the MENU! While turkey and ham are staples, I think we can all agree that the real stars of the Thanksgiving table are the sides - and ohhh, do we have some delish sides!

I added a few new favorites to my menu this year, including these Twice Baked Sweet Potatoes with Cinnamon Pecan Streusel [*insert drooling emoji]

We brought this to a recent Friendsgiving event and they were a real hit! Im excited to share this fun twist on a Thanksgiving classic.

 
 
 
 

Twice Baked Sweet Potatoes with Cinnamon Pecan Streusel

* cook time: About 1 hour

* total time: 1 hour, 10 minutes

Servings: 8

Ingredients:

Sweet Potatoes -

- 4 sweet potatoes, cut in half lengthwise

- 1/4 cup + 3 Tbsp coconut sugar [split for baking and filling]

- 2 tsp + sprinkle of cinnamon [split for baking and filling]

- 1 Tbsp coconut oil, melted

- 1/4 cup vegan butter, softened

- 1/4 cup canned full fat coconut milk [try to use mostly the cream at the top and a little liquid]

Cinnamon Pecan Streusel -

- 1/4 cup coconut sugar

- 1/4 cup coconut flour

- 1/4 cup vegan butter, melted

- 1 tsp cinnamon

- 1/2 cup chopped pecans

Instructions:

1. Preheat oven to 375 F

2. Cut sweet potatoes in half and coat with melted coconut oil

3. Top potatoes with 3 Tbsp coconut sugar and sprinkle with cinnamon

4. Bake 45-50 minutes, until easy to pierce with a fork

5. Scoop out the center of the potatoes into a mixing bowl, leaving the skin in tact

6. Mash the potatoes and mix in remaining 1/4 cup coconut sugar, 2 tsp cinnamon, vegan butter, and coconut milk

7. Meanwhile, bake the potato skins for about 5 minutes, until crispy

8. Scoop sweet potato mixture back into the potato skins

9. Combine all dry streusel ingredients in a bowl, stirring until combined

10. Stir melted butter into dry streusel ingredients

11. Top sweet potatoes evenly with streusel

12. Bake 7-10 minutes and serve!
