Vegan Cranberry Apple Stuffing

Okay okay, I know I said that a majority of my Thanksgiving plate is made up of my Sweet Potato Casserole [true] but also... I can't get enough of this Cranberry Apple VEGAN Stuffing! If you're vegan or have sensitivities to dairy/eggs, you know just how hard it can be to make a stuffing that stays together and brings the classic flavor you're used to. 

Good quality bread is the key to good stuffing. I like to get a fresh baked French baguette from my local natural food store and let it sit out on the counter overnight so it has that true "day old bread" crunch. I also prep the wild rice the day before just to cut down cooking time on the big day!

Whether you're enjoying this stuffing alongside a big ol' slice of turkey or tofurkey, I  just know you'll love it! 

Here's the deets... 

Cranberry Apple Stuffing [Vegan]

What you'll need: 

  • 1 cup of already cooked wild rice

  • 1 French baguette, cubed (I slice it into rounds and then slice each round into four quarters)

  • 2 1/4 cups vegetable broth (or chicken if preferred, but then not vegan)

  • 1/4 cup chickpea (garbanzo bean) flour

  • 2 Tbsp poultry seasoning

  • 1 shallot, diced

  • 1/2 red onion, diced

  • 1 apple, sliced and diced

  • 2 cloves garlic, minced

  • 1/4 cup dried cranberries

  • salt + pepper to taste


What to do:

  1. Preheat oven to 375

  2. Cook wild rice if you have not already, set aside

  3. Slice baguette according to directions above, set aside

  4. In a large mixing bowl, add broth, chickpea flour, poultry seasoning, salt and pepper, and mix

  5. In a pan on the stove, sauté shallot, red onion, apple, and garlic with a little olive oil (or preferred oil)

  6. Add to the large mixing bowl with broth, etc. and stir to combine

  7. Toss in bread cubes and fully coat in mixture

  8. Fold in cranberries and wild rice (if mixture seems to dry, you can add extra broth and stir)

  9. Line 11x13 baking dish with parchment paper and pour in stuffing

  10. Bake for 45-50 minutes
