2-Ingredient Instant Pot Chicken Verde

Who else loves their Instant Pot as much as I do? This appliance has been a LIFE SAVER on those nights when I get home from work and don’t feel like spending time in the kitchen.
And the best part? I have a habit of forgetting to thaw my chicken beforehand and this thing will turn frozen chicken into easy-to-shred chicken in less than 30 minutes!
With a jar of salsa verde on hand, you can make this meal in less than 30 minutes!
2-Ingredient Instant Pot Chicken Verde
Prep Time: 5 minutes
Cook Time: 25-30 minutes, dependent on Instant Pot settings
What you’ll need:
3-4 chicken breasts
1 jar salsa verde
What to do:
Add chicken breasts and jar of salsa to Instant Pot
Cook on “poultry” setting (or equivalent setting on your Instant Pot)
Shred and serve in tacos, on a taco salad [recipe below], or any way your heart desires!
Taco Salad Ingredients:
1 bag of romaine lettuce
1 cup brown rice, cooked (can also use quick microwaveable rice)
1 red bell pepper, diced
Citrus Vinaigrette or lime juice
Optional: 1/2 cup black beans, cooked
Avocado for topping
