Greek Tacos and Mediterranean Salad
Dairy-free, Gluten-free
Who said tacos can’t be Greek? I don’t know about you, but I love the taste of fresh Mediterranean food! Unfortunate for me, many greek sauces are made with yogurt, which can make it hard to go out to a fresh, Greek dinner.
Ever since I started making these Greek Tacos with a fresh Mediterranean Salad - I haven't wanted to leave my house to enjoy this food anyways!
I topped a gluten-free tortilla with traditional hummus, mixed greens, greek-inspired ground turkey, and pickled red onion. Then I served it with a salad of red pepper, cucumber, red onion, and kalamata olives.
Here is the recipe!
Greek Tacos with Mediterranean Salad
Prep Time: 10 minutes
Cook Time: 20-30 minutes
What you’ll need:
2lb ground turkey
1 Tbsp Italian seasoning
1 Tbsp cumin
1/2 tsp dill
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp salt
1/4 tsp coriander
1/4 tsp garlic powder
2 Tbsp olive or avocado oil
Gluten-free tortillas (I used Siete Foods cashew flour tortillas)
1 container hummus, plain or mediterranean flavor
Mixed greens
Pickled red onion (I used TheCuttingVeg recipe!)
What to do:
Mix seasoning in a small bowl
Combine seasoning and ground turkey
Heat up a pan on the stove and add oil
Add turkey to pan, break up the meat with a spatula, and cook until it’s ready to eat
Now to make the side dish…
Mediterranean Salad
What you’ll need:
1 red bell pepper, diced
1 cucumber, diced
1/2 cup pickled red onion
1/4 cup pitted kalamata olives
About 1/4 cup Primal Kitchen Foods Greek Marinade (or a dairy-free greek vinaigrette)
What to do:
Toss veggies, olives, and dressing in a bowl and serve
