Pork Carnitas Sweet Potato Nachos

My husband looks forward to football season every year and he claims it’s because of his absolute obsession with the sport, but I think we all know the truth… it’s the FOOD!

I think we can all agree that game day food is the BEST food. I pull out all the stops with fresh guacamole and chips, bean dip, White Chicken Chili, you name it.

But for the BIG game (aka the Super Bowl), I pull out the motherload of all game day recipes… my Pulled Pork Sweet Potato Nachos [and the crowd goes wiiiiild!!]

I remember the first time I made these about 4 years ago and ever since, my husband wakes up on Super Bowl Sunday to the smell of his beloved pork cooking in the crockpot, just waiting for these tasty nachos.

Without further ado… here is the real star of the game! [and the only reason I look forward to the Super Bowl other than the halftime show]

Pulled Pork Sweet Potato Nachos

Yields 2 platters of nachos [with extra pork to spare]

Prep Time: 20-25 minutes

Cook Time: 8-10 hours for pork, 20 minutes for nachos

What you’ll need:

  • 10lb pork shoulder (makes two platters of nachos, can cut in half if making one pan)

  • About 1/4 cup olive oil, to coat the pork + 2-3 Tbsp for sweet potatoes

  • 2 Tbsp cumin

  • 1 Tbsp Oregano

  • 1 Tbsp pepper

  • 1 Tbsp salt

  • 3 tsp onion powder

  • 2 tsp ancho chili powder

  • 2 tsp garlic powder

  • 1 tsp paprika

  • 2 oranges, juiced

  • 3 limes, juiced

  • 5-6 sweet potatoes, sliced thinly

  • 2 cans sliced olives

  • 2 roma tomatoes, diced

  • 1/2 red onion, diced

  • 1 can black beans, drained and heated

  • Dairy free cheddar cheese (i.e. Vio Life, Daiya) OR Core and Rind Cashew Cheesy Sauce

  • 3-4 avocados, peeled and diced

  • If making a platter that is not dairy-free [like I do for the hubs and his friends], 1 bag of Mexican shredded cheese

  • If making a platter with chips instead of sweet potatoes [also like I do for hubs], 1 bag tortilla chips [and then you can cut the sweet potato quantity in half]

What to do:

  1. In a small bowl, combine all seasoning for the pork shoulder

  2. Place pork shoulder in crockpot and rub the shoulder with olive oil and seasoning

  3. Juice oranges and lime over the pork [half on one side, half on the other]

  4. Cook in crockpot on low, 8-10 hours or until cooked through and easy to shred

  5. Remove layer of fat from meat before shredding for nachos, if applicable

  6. Preheat oven to 375 degrees F

  7. Shred meat and lay it out on a baking sheet

  8. Bake 15 minutes until crispy, then it’s ready to add to the nachos!

  9. To prepare the sweet potato nachos: Toss thinly sliced sweet potato in a little olive oil and bake on sheet pan for 15-20 minutes

  10. Top sweet potatoes and/or chips with meat, olives, tomato, red onion, black beans, and cheese of choice

  11. Bake about 10 minutes, or until cheese is melted and toppings are warmed

  12. Add avocado on top and serve!
