Mediterranean Turkey Meatballs
Dairy-free, Gluten-free
These Mediterranean Turkey Meatballs are a part of the regular dinner rotation in our house - and they make for great lunch leftovers throughout the week, too!
Whether you’re meal prepping for the week or looking to feed a group, this recipe is perfect for you!
You can top these meatballs on your favorite pasta, make a mediterranean salad for them, or just enjoy them on their own with a veggie side dish.
Whichever you choose, the recipe itself is simple and ohhh so tasty!
Mediterranean Turkey Meatballs
Yields about 14-16 meatballs
Prep Time: 15 minutes
Cook Time: 20-23 minutes
What you’ll need:
2lb ground turkey
1 Tbsp olive oil
1 red bell pepper, diced finely
1/2 yellow onion, diced finely
2 cloves garlic, minced
1 cup spinach, chopped finely
1 1/2 Tbsp Italian seasoning
1 tsp onion powder
dash of salt
Optional: 1/4 cup vegan (or regular if preferred) parmesan, shredded (I use the VioLife brand)
What to do:
Preheat oven to 350 degrees F
Saute the bell pepper, onion, and garlic with olive oil
Once they’re almost ready add in the spinach and cook until just wilted, remove from heat and allow to cool
In a large bowl, add ground turkey, seasoning, and parmesan (if adding this)
Use your hands to combine the seasoning and meat mixture, then pour in the veggies from the pan and combine
Line baking sheet with parchment paper or spray with cooking oil (i.e. avocado oil spray)
Roll meatballs and set them on the baking sheet
Bake 20-23 minutes, until they’ve reached 160 degrees F with a meat thermometer
Add to your favorite dish and enjoy!
I added my meatballs to a fresh mediterranean salad made with chopped kale, diced bell pepper, diced cucumber, kalamata olives, and a dairy-free mediterranean dressing.
