If you know me, you know I’m all about those quick and easy dinners that use ingredients I have on hand.

After a busy day of checking items off my To Do list (or procrastinating them all until the evening…), I rarely want to spend hours cooking a gourmet meal in the kitchen (and I love to cook!)

This Clean-Out-The-Fridge Curry Stir Fry recipe is one of my go-to simple dinner recipes, and it’s so versatile! If you have these vegetables on hand or others that you need to use, feel free to toss them in! Whether you follow a plant-based diet or prefer to add meat protein into the mix, this recipe can be made to your liking. 

And dare I say it takes 30 minutes or less to make? 

Let’s get started! 

Clean-Out-The-Fridge Curry Stir-Fry

Prep time - 10 min

Cook time - 15-20 min

*if adding chicken, bake simultaneously with method of choice

What you’ll need:

  • 2-3 chicken breasts, diced into squares (Optional)

  • 3 Tbsp avocado oil (can sub for coconut oil or olive oil)

  • 2 garlic cloves, minced

  • 1 zucchini, sliced and quartered

  • 1 yellow onion, sliced 

  • 1 red bell pepper, sliced

  • ½ orange bell pepper, sliced

  • ½ yellow bell pepper, sliced 

  • 2 Tbsp red curry paste

  • 2 tsp ginger, fresh or paste

  • 1 can coconut milk (I prefer “light” for this recipe)

  • 2 green onion, sliced

What to do:

  1. If adding chicken, cook in large pan or wok on the stove with 1 Tbsp avocado oil. You can also cook in an Instant Pot or pressure cooker if you have this on hand (will need 1 cup water or chicken stock for cooking with this method and will need to shred chicken when ready). 

  2. If chicken is cooked in pan, remove and set aside for the veggie/curry portion of the recipe

  3. In large pan or work, add garlic and 2 Tbsp avocado oil to the pan before tossing in all veggies, except the green onion (zucchini, bell peppers, yellow onion) and sauté (about 10 min)

  4. Stir in red curry paste and ginger 

  5. Pour in coconut milk and stir 

  6. Add in green onions and if adding chicken, add this back in now as well

  7. Bring mixture to a light boil (about 5 min)

  8. Remove from heat and serve over rice or rice noodles
