As soon as summertime arrives, I move my cooking from the kitchen to the grill!

I’m all about quick, simple meals cooked on the grill - and of course, the bonus of having less clean up!

With my 5-minute-prep Sesame Ginger Chicken and easy Summer Salad, you can have dinner on the table in no time.

Grilled Sesame Ginger Chicken

Yields 5-6 thin-sliced chicken breasts

Prep Time: 5 minutes

Cook Time: 20-25 minutes

What you’ll need:

  • 2 lbs thin sliced chicken breast

  • 1/2 bottle of Annies Homegrown Sesame Ginger dressing

  • 1 tsp garlic, minced

  • 1/2 tsp fresh grated ginger

  • dash of salt and pepper

What to do:

  1. Mix together the marinade ingredients (dressing and spices) in a large bowl.

  2. Add chicken into the bowl and coat with marinade

  3. Let chicken sit in fridge to marinate or toss them right on the grill

  4. Flip halfway through and check that the temp has reached 165 degrees F before serving

Now for the festive side dish…

Summer Salad

What you’ll need:

  • 1 bag Spring Mix Greens

  • 1/2 cup fresh, rinsed blueberries

  • 1/2 cup fresh, rinsed, and sliced strawberries

  • 2 beets (peeled and pre-steamed), sliced

  • Handful of snap peas, sliced in half lengthwise

  • 1/4 cup roasted, unsalted cashews

  • 3 Tbsp Annies Homegrown Strawberry Salad Dressing

  • Optional: crumbled goat cheese, dependent upon allergies

What to do:

  1. Prepare fruits and vegetables for salad

  2. Toss the greens, fruit, vegetables, cashews, and dressing in a bowl

  3. Serve!
