Gluten-Free Chocolate Chip Banana Bread

What better way to send a lazy Sunday than baking a fresh loaf of banana bread, cozying up on the couch, and enjoying time at home. This is my IDEAL Sunday, especially when combined with that crisp fall weather. Although it’s only August and I’m currently looking out the window at blue skies, I know fall is going to be here before we know it and that is truly my favorite baking season.
Growing up, my mom always had ripe bananas in the house and there was never a bad day to bake banana bread. This recipe has been a family classic for as long as I can remember and now, I’ve made a few adjustments to accommodate gluten-free and dairy-free options, as well as cut out refined sugar (don’t tell my mom!).

Gluten-Free Chocolate Chip Banana Bread

Cook time: 50-55 minutes
Total time: About 1 hour, 10 minutes
Servings: 8-10 slices
Ingredients:
- 3 ripe bananas
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 cup unsweetened apple sauce
- 2 eggs
- 2 1/2 cup almond flour
- 1/4 cup coconut flour
- 2 Tbsp ground flax seed
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 cup dairy-free chocolate chips or chunks (optional: handful extra for topping)
Instructions:
Preheat oven to 350 F
Mash the ripe bananas in a bowl and add in coconut sugar, vanilla, apple sauce, and eggs. Mix to combine.
In a separate bowl, combine dry ingredients (almond flour through cinnamon) and stir until mixed thoroughly.
Add wet ingredients into dry ingredients, stir to combine.
Line a loaf pan with parchmnent paper, pour in banana bread mixture, and top with chocolate chips/chunks if preferred.
Cover with foil (tent the foil) and bake 50-55 minutes, until a toothpick comes out clean when pricked
