Gluten-Free S’Mores Bars

You know what’s better than sticky s’mores that melt all over your hands and get stuck in your hair?… These one-pan Gluten Free S’Mores Bars, no mess and just as tasty!

While I love sitting around a campfire and roasting my marshmallows to toasty perfection, sometimes I just want s’mores at home without all the mess and smelling like campfire smoke afterwards.

Enter… these Gluten Free S’Mores Bars made with some of my favorite Bob’s Red Mill GF Flours.

Gluten Free S'Mores Bars

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 35 minutes

Servings: 15 bars

Ingredients:

  • 1 1/4 cup Bob's Red Mill gluten free oats (quick cooking)
  • 1 cup Bob's Red Mill almond flour
  • 1/4 cup Bob's Red Mill coconut flour
  • 3/4 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup coconut oil, melted
  • 1 tsp vanilla
  • 1 egg
  • 1 bag dairy-free chocolate chips
  • 1 bag mini marshmallows

Instructions:

  1. Preheat oven to 350 F

  2. In a large mixing bowl, combine gluten free oats, almond flour, coconut flour, coconut sugar, cinnamon, baking soda, and salt

  3. Stir in 3/4 cup melted coconut oil, vanilla and egg (can sub flax egg to make vegan: 1 Tbsp ground flax seed + 2 Tbsp water, stir and let sit 10 minutes)

  4. Set aside about 1/2 cup of the mixture

  5. In a 9x13 pan lined with parchment paper, use a spatula to press crust mixture into the pan

  6. Bake for 20 minutes

  7. Top with chocolate chips, then marshmallows, then sprinkle the crust mixture you set aside on top in crumbs

  8. Bake additional 5 minutes, watching carefully so marshmallows don't burn

  9. Optional: Melt 3 Tbsp chocolate chips with 1 tsp coconut oil and drizzle on top
