Gluten-Free Chocolate Marbled Banana Bread

* cook time: 50-55 minutes

* total time: 1 hour, 5 minutes

Servings: 6-8 slices

Ingredients:

- 3 ripe bananas

- 1/2 cup coconut sugar

- 1 tsp vanilla extract

- 1/2 cup unsweetened apple sauce

- 2 eggs

- 2 1/2 cup Bobs Red Mill almond flour

- 1/4 cup Bobs Red Mill coconut flour

- 2 Tbsp ground flax seed

- 1 Tbsp baking powder

- 1 tsp baking soda

- 1 tsp salt

- 1 tsp cinnamon

- 1 Tbsp cacao powder

- 1/2 cup dairy-free mini chocolate chips

Instructions:

1. Preheat oven to 350 F

2. Mash the ripe bananas in a bowl and add in coconut sugar, vanilla, apple sauce, and eggs. Mix to combine.

3. In a separate bowl, combine remaining dry ingredients (almond flour through cinnamon) and stir until mixed thoroughly.

4. Add wet ingredients into dry ingredients, stir to combine.

5. Separate out about 1 cup of the banana bread mixture into a separate bowl

6. Add cacao powder into the separated mix and stir to combine

7. Line a loaf pan with parchment paper, pour in banana bread mixture (layering the plain, chocolate, then plain) and top with mini chocolate chips

8. Cover with foil (tent the foil) and bake for 50-55 minutes, until a toothpick comes out clean when pricked
