Valentines Day is nearly here and although we don’t need a holiday to show our loved ones how much we care, it sure is nice to have a day dedicated to celebrating LOVE.

My husband and I used to get each other elaborate gifts for Valentines Day, but in recent years, we have opted for fun experiences together and yummy treats to share! It makes for a more memorable day and we can appreciate it so much more than tangible gifts.

That’s why this year I decided to make a batch of these Chocolate Strawberry Rice Krispie Treats to share with those I love!

Full transparency: I made these and my husband informed me he does not like rice krispie treats… I guess you can still learn something new after nearly 10 years. These will have to be shared with my friends and coworkers instead! Hehe

Chocolate Strawberry Rice Krispie Treats

* prep time: 5 minutes

* cooling time: 1 hour

* total time: 1 hour, 5 minutes

Servings: 12-16 treats

Ingredients:

- 10 oz box Gluten-Free Cacao Crisp Cereal (I use OneDegree Organic)

- 10 oz bag mini marshmallows (I use the Vegan brand Dandies)

- 1 oz bag freeze-dried strawberries, crushed (I use the Natierra brand)

- 1/4 cup vegan butter

- 1 tsp pure vanilla extract

Instructions:

1. Add butter to a large pot on the stove to melt

2. Once butter is melted, mix in the vanilla extract

3. Pour in the mini marshmallows and 2 Tbsp of the crushed freeze-dried strawberries. With a spatula, stir until the marshmallows are melted down and creamy

4. Remove from heat and stir in the cacao crisp cereal

5. Press the cacao crisp mixture into a 9x9 pan

6. Sprinkle the remainder of the freeze-dried strawberries on top of the rice krispie treats, pressing them down a bit so they stick

7. Optional: Melt 2 Tbsp dairy-free dark chocolate and 1 tsp coconut oil, stir, and drizzle on top for some extra chocolate!

8. Cover and allow to cool in the refrigerator for at least 1 hour (can cool longer, but no less than 1 hour)

9. Cut into 12 or 16 squares, depending on desired size, and enjoy!

 
 

These make the perfect treat for a Galentines Day party, can be wrapped as a present for your Valentine, and can even be enjoyed year-round!
