Gluten free Gingerbread Banana Bread

What do you get when you combine my love for banana bread with my love for the holiday season?

… Gingerbread Banana Bread, of course!

This recipe has the light sweetness of banana bread with the seasonal spice of gingerbread - some would say these two are a match made in heaven!

& Do you wanna know the best part? I made a vegan cream cheese frosting and topped it with candied ginger pieces! (yum!)

 
 
 
 

Gluten Free Gingerbread Banana Bread

Servings: 6-8 slices

Ingredients:

Gingerbread Banana Bread -

- 3 ripe bananas

- 1/2 cup coconut sugar

- 1 tsp vanilla extract

- 1/2 cup unsweetened apple sauce

- 2 Tbsp molasses

- 2 eggs

- 2 1/2 cup Bobs Red Mill almond flour

- 1/4 cup Bobs Red Mill coconut flour

- 2 Tbsp ground flax seed

- 1 Tbsp baking powder

- 1 tsp baking soda

- 1 tsp salt

- 3 tsp ground ginger

- 1 tsp cinnamon

- 1/2 tsp ground cloves

- 1/2 tsp nutmeg

Vegan Cream Cheese Frosting -

- 1/4 cup vegan butter

- 1/2 cup vegan cream cheese

- 2 cups organic powdered sugar

- 1 Tbsp coconut milk (or non-dairy milk)

- 1/2 tsp vanilla

- 1/4 cup candied ginger, chopped or cut into pieces with kitchen scissors

Instructions:

1. Preheat oven to 350 F

2. Mash the ripe bananas in a bowl and add in coconut sugar, vanilla, apple sauce, molasses, and eggs. Mix to combine.

3. In a separate bowl, combine remaining dry ingredients (almond flour through nutmeg) and stir until mixed thoroughly.

4. Add wet ingredients into dry ingredients, stir to combine.

5. Line a loaf pan with parchment paper, pour in banana bread mixture, and cover with foil (tent the foil)

6. Bake for 60-75 minutes, until a toothpick comes out clean when pricked

7. To make the icing, add all ingredients except the candied ginger to a stand mixer bowl and whisk until smooth and thick (you can also use an electric hand mixer or maybe even a whisk if you don't have these)

8. Once the bread is done, remove from oven and cool for about 20 minutes (even better if you cool in freezer) before spreading with icing.

9. Chop up candied ginger pieces and sprinkle on top of the frosting

10. Slice and serve!
