Peanut Butter and Jelly Banana Bread

It’s Peanut Butta Jelly Tiiiime! Okay okay, I just have the urge to say that every time I think of this Gluten-Free Peanut Butter & Jelly Banana Bread!

& I know I’ve said this before, but this is hands down my FAVORITE banana bread recipe that I’ve made! (say whaaaa!) Maybe it’s the nostalgia of PB&J or my love for banana bread (or a combination of the two), but I can already tell that I’ll be making this recipe on repeat!

As a twist on my classic Banana Bread recipe, I added peanut butter to the loaf itself and topped it with strawberry jam + crushed peanuts and drizzled it all in even more peanut butter when it cooled!

 
 
 
 

Gluten-Free Peanut Butter and Jelly Banana Bread

Prep time: 15 minutes

Cook time: 50 minutes

Total time: About an hour, 5 minutes

Servings: 8-10 slices

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup coconut sugar
  • 1 tsp vanilla
  • 1/4 cup peanut butter
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 2 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 2 Tbsp ground flax seed
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup raspberry or strawberry jam
  • 2 Tbsp peanuts, crushed

Instructions:

  1. Preheat oven to 350 F

  2. In a mixing bowl, mash the ripe bananas.

  3. Add in the coconut sugar, vanilla, peanut butter, coconut oil, and eggs. Mix to combine.

  4. In a separate bowl, mix together dry ingredients (almond flour through cinnamon).

  5. Combine wet + dry ingredients together.

  6. Line a loaf pan with parchment paper and pour in banana bread mixture.

  7. Spoon jam on top and use a fork or toothpick to marble it. Add crushed peanuts on top.

  8. Cover with foil and bake 40 minutes. Remove foil and bake an additional 10-15 minutes.
