Chocolate + coconut is arguably the best combination of flavors since PB&J and I gotta say, I’m here for it!

This recipe for Gluten Free Oatmeal Coconut Chocolate Chip Cookies is a revamp of an old blog recipe of mine. Since cutting out gluten, there were some recipes that I couldn’t enjoy anymore - but I knew there was a way to fix that!

After 5 times testing this recipe [my husband seemed to have no quarrels about that], I finally landed on one that made for a soft cookie with the crunch of toasted coconut and that ooey gooey chocolate chip cookie flavor we all love.

These cookies were a real labor of love and I hope you enjoy them!

Gluten Free Oatmeal Coconut Chocolate Chip Cookies

* prep time: 10 minutes

* cook time: 8-9 minutes

* total time: About 20 minutes

Servings: Makes about 24 cookies

Ingredients:

- 1 1/2 cups gluten-free all purpose flour (I use Bobs Red Mill or Namaste brand)

- 1 1/2 cup gluten-free oats

- 1 tsp baking soda

- 1/2 tsp salt

- 1 tsp cinnamon

- 3/4 cup coconut oil, melted

- 2 Tbsp maple syrup

- 3/4 cup coconut sugar

- 1 egg

- 1/4 cup coconut milk (not canned)

- 2 tsp vanilla

- 1/4 cup shredded, unsweetened coconut

- 1/2 cup dairy free chocolate chips or chunks

Instructions:

1. Preheat oven to 350 F

2. In a small mixing bowl, mix all dry ingredients (flour, oats, baking soda, salt, cinnamon)

3. In a large mixing bowl, mix together the wet ingredients (coconut oil, maple syrup, coconut sugar, egg, coconut milk, vanilla)

4. Combine dry into wet ingredients

5. Fold in shredded coconut and chocolate chips

6. On a baking sheet lined with parchment paper, use a scoop (cookie or ice cream scoop) to scoop the cookie dough into 12 balls on the sheet

7. Optional: Add a few chocolate chunks on top and sprinkle with extra coconut

8. Bake 8-9 minutes

9. Remove from oven and allow to cool 1-2 minutes on pan before transferring to wire cooling rack
