Lasagna noodles made of chickpeas? ... nothing is impastable with Banza pasta!

These no-boil lasagna noodles from Banza have that classic al dente texture and make quite the layering system for all that [dairy-free] cheesy pasta sauce goodness.

I made this simple Gluten Free Ground Turkey Lasagna for some friends a while back and they were seriously impressed that there was no gluten OR dairy in the recipe! So, you know I had to share the recipe with you all!

Gluten Free Ground Turkey Lasagna

* prep time: 15 minutes

* cook time: 45 minutes

* total time: 1 hour

Servings: 9-12

Ingredients:

- 1 box Banza lasagna noodles

- 1 lb ground turkey

- 1 Tbsp olive oil

- 2 tsp italian seasoning

- 2 cloves garlic, minced

- 1/4 yellow onion, diced finely

- 3-5 crimini mushrooms, sliced

- 1 zucchini, sliced and quartered

- 28oz jar marinara sauce (no sugar added), split

- 1 bag VioLife dairy-free shredded mozzarella, or preferred dairy free cheese

Instructions:

1. Preheat oven to 375 F

2. In a pan on the stove, add ground turkey, olive oil, italian seasoning, and garlic

3. Cook thoroughly and drain pan with the lid to get rid of excess liquid

4. Add in onion, mushrooms, and zucchini and saute

5. Pour in 1 cup of marinara sauce and stir to combine

6. In a 9x13 baking dish, pour 1 cup of marinara and spread around with spatula

7. Layer 3-4 of the lasagna noodles, add half of the turkey sauce filling, layer with noodles, add rest of filling, layer with noodles

8. Cover the top with remainder of marinara sauce, spreading evenly with a spatula

9. Sprinkle with dairy-free cheese and a little more italian seasoning, if desired

10. Cover with foil and bake 45 minutes
