Thanksgiving is in a few short days and it’s time to master your side-dish game because I think we can all agree those are the real stars of the show!

In search of a flavorful gluten-free side dish, I decided to create a simple stuffing recipe using quinoa as the base! Keeping all the flavors and add-ins of traditional stuffing, this Gluten Free Quinoa Stuffing makes for the perfect allergen-friendly stuffing option at your table this year.

This recipe can easily be made ahead of time or quickly on the stovetop on Thanksgiving day. Simply sauté the veggies, cook the quinoa in vegetable broth and seasoning, then mix them all together with dried cranberries!

Gluten Free Quinoa Stuffing

* prep time: 10 minutes

* cook time: 15 minutes

* total time: 25 minutes

Servings: 8-10

Ingredients:

- 1 cup quinoa, rinsed

- 1 3/4 cup vegetable broth

- 1 Tbsp poultry seasoning

- 1 tsp onion powder

- 4 celery stalks, sliced

- 4-5 mushrooms, diced finely

- 1/4 red onion, diced

- 2 cloves garlic, minced

- 1 Tbsp avocado or olive oil

- 1/4 cup dried cranberries

- 1/4 cup chopped pecans

- salt + pepper to taste

Instructions:

1. Cook quinoa with vegetable broth and seasonings [poultry seasoning and onion powder]

2. Saute celery, mushrooms, onion, and garlic in a pan with avocado or olive oil

3. Lightly toast pecans in a pan on the stove for about 5 minutes

4. Add all ingredients to a bowl and mix until combined
