One topic you’ll hear me share about often is food accessibility. To me, this is the idea that everyone deserves access to healthy, delicious food options [no fancy grocery store required].

This is why I create many budget-friendly meal options that can be made as meal prep or used to serve a family.

All in all, I believe that healthy food doesn’t have to be boring - and it sure doesn’t need to be complicated!

This simple 20-minute dinner of Instant Pot Orange Chicken over a fresh Asian-inspired salad is a go-to in our home, and I hope it becomes a regular in your home as well!

Instant Pot Orange Chicken

Yields about 4 servings

Prep Time: 5 minutes

Cook Time: 20-25 minutes (depending on Instant Pot settings)

What you’ll need:

  • 2-3 chicken breasts, trimmed

  • Juice of 1 orange

  • 1/4 cup coconut aminos ( or gluten-free Tamari or soy sauce)

  • 2 tsp grated ginger

  • 1/4 cup water

What to do:

  1. In a small bowl, mix together the orange juice, coconut aminos, ginger, and water

  2. Add chicken breasts to Instant Pot and coat with the sauce

  3. Set to the “poultry” setting and let cook

  4. Once ready, shred the meat and set aside

Now, it’s time to prep the salad!

Asian-Inspired Brussel Sprout Salad
