Spinach Mushroom and Sausage Frittata

What better way to start the day than with a Spinach Mushroom and Sausage Frittata, all toasty + fluffy + delicious!

This skillet breakfast has quickly become a favorite in our house - and I’ve even made it for a baby shower and it was an hit! It truly is the perfect savory brunch dish - with eggs, sourdough bread cubes, maple pork sausage, and veggies.

I start by cooking up a pound of maple pork sausage in my cast iron skillet, then add in the sliced mushrooms and sauté. Add in fresh chopped spinach and green onions. Cube fresh sourdough bread and add to the skillet and toss with the veggies and sausage. Pour over whisked eggs and give it a good stir to coat the bread in the egg. Toss the skillet into a preheated oven and cook until toasty + cooked through, about 55 minutes. Serve & enjoy!

 
 
 
 

Spinach Mushroom and Sausage Frittata

Total time: About and hour, 15 minutes

Servings: 8 slices

Ingredients:

  • 1lb maple pork sausage

  • 2 Tbsp avocado oil

  • 2 cups mushrooms, sliced

  • 2 cups spinach, chopped

  • 3 green onions, sliced

  • 1/2-3/4 loaf Organic sourdough bread, cubed

  • 24 eggs

  • Garlic powder, to taste

  • Pepper, to taste

Instructions:

  1. Preheat oven to 375 F

  2. Heat cast iron skillet on the stove with avocado oil and add pork sausage, breaking it up into crumbles

  3. Once pork sausage is fully cooked, add in mushrooms and sauté

  4. Toss chopped spinach and green onion into the skillet and lightly sauté before removing from the heat

  5. Whisk 24 eggs with garlic powder and pepper, to taste

  6. In the cast iron skillet with the veggies and pork sausage, add in cubed sourdough bread

  7. Pour egg mixture over the sourdough bread cubes and mix just enough to coat the bread in the egg mixture

  8. Cover the pan with foil, place it in the preheated oven and bake for 45-55 minutes (until fully cooked through)

 
 

Serve the frittata hot from the skillet & enjoy! This makes the perfect savory brunch dish - and is especially perfect for feeding a group of people.
